By fermentation, we mean that the colourless poly-phenolic substances in the Tea Leaves have been oxidised under the catalysis of poly-phenolic enzyme oxide and then form the Red Tea pigment. Part of the pigment dissolves in water and become the red colour Tea liquid after soaking. Meanwhile the rest of the pigment does not dissolve in water but instead accumulates in the Tea leaves which are reddened as a result.
